Homemade Banana Nut Muffins

I went on a Pinterest search and found the PERFECT Food Storage Banana Nut Muffin Recipe for breakfast that would help me rotate my food storage

I have 2 boys who LOVE breakfast!  I like to look for breakfast ideas that I can use my staple “food storage” ingredients in to help rotate it.  So I went on a Pinterest search and found the PERFECT Food Storage Banana Nut Muffin Recipe!  Pinterest recipes are usually 50/50 for me in working out, so I was GLAD this one worked out so well!  I make these every other month and double the recipe to keep some in the freezer.

Banana Nut Muffin Recipe

Ingredients:

  • 2 1/2 cups Oats
  • 2 eggs OR 4-5 Tbsp egg powder AND 4-5 Tbsp water
  • 1 tsp Baking Soda
  • 2 Tablespoons Ground Flax seed (for extra fiber, but you can omit it if you like)
  • 2 Ripe Bananas
  • 1/2 cup Honey
  • 1 cup plain Greek Yogurt
  • 1 tsp Vanilla Extract
  • 1/2 cup mini Chocolate chips (Optional)
  • 1/2 c chopped Pecans (Optional, but adding it makes it more AMAZING!)

Instructions:

Place oats in Ninja Blenderand blend for 10-20 seconds until turns to flour.  Then add: eggs, baking soda, flax seed, bananas, honey, yogurt, and vanilla.  Finally, add your chips and nuts blending real quick.

Yes, I mix it all up in my Ninja Blender!  So easy!  If I double the recipe, I use my Boschand just use the blender for my oat flour.

Bake 350 for about 18 min.  Makes about 15 muffins.

I LOVE the fact that I can use Oats AND honey which BOTH rotate Food Storage!  Thank you Hip2Save!
